Pumpkin Bars

Fall is one of my favorite seasons. It seems like life takes a tiny breather before the whirlwind of the holidays. A favorite fall memory is making these yummy Pumpkin Bars with my mom and then watching Anne of Green Gables. Neither of which I am doing today but it sure would be nice! Enjoy the recipe!

INGREDIENTS
4 eggs
1 ⅔ c. sugar
1 c. vegetable oil
1 (16 oz) can pumpkin
2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Icing
1 (3oz) pkg. cream cheese, softened
2 c. confectioners’ sugar
¼ c butter, softened
1 tsp. vanilla
1-2 Tbs. milk
DIRECTIONS:
1. Heat the oven to 350°.
2. In a mixing bowl beat eggs, sugar, oil and pumpkin.
3. Combine flour, cinnamon, baking soda and salt; gradually add to pumpkin mixture and mix well.
4. Pour into an ungreased 13x9 or 15x10 baking pan and bake for 25-30 minutes.
5. Cool completely.
6. To make icing, beat cream cheese, powdered sugar, butter and vanilla in a small bowl.
7. Add enough mild to achieve desired consistency.
8. Spread over bars.
Makes 2 dozen
